Citrus Arugula Pesto


4 cups packed fresh arugula leaves

100g package pine nuts

1 large mandarine orange, peeled and pulp removed (1/2 a large navel orange should also work or 2 small mandarine oranges)

1/2 cup avocado oil 

1/2 tsp - 1 tsp sea salt (to taste) 


1. Place all the ingredients into your food processor or high speed blender and blend until smooth

2. Serve and enjoy!

NOTE: This stays fresh in the fridge for at least one week
