Start with the The Articles of Faith of the Church of Jesus Christ of Latter-day Saints (the Mormons).  You should also read a bit of the Book of Mormon.  You could start with the First Nephi (1 Ne.).  There are plenty of summaries of the Book of Mormon on the Web as well.
The best book on the Mormons is John L. Brooke, The refiner's fire: the making of Mormon cosmology, 1644-1844 (Cambridge, 1994).  You're in luck, because the entire book is online, if you log in through a university system.
