Cafe Rio Cilantro Lime Rice Copycat

Adapted from Favorite Family Recipes



1 c. uncooked long grain white rice

1 t. butter or margarine

2 cloves garlic, minced

1 t. fresh squeezed lime juice

15 oz. chicken broth (I made 2 c. from McCormick’s chicken base)


1 T. freshly squeeze lime juice

2 t. granulated sugar

3 T. fresh chopped cilantro



In a medium saucepan, combine rice, butter, garlic, chicken broth and 1 t. lime juice.


Bring to a boil.  Cover and reduce temp to low.  Cook for 20-25 minutes.


Remove from heat.

In a small bowl, combine 1T. lime juice, sugar and cilantro.


Pour over cooked rice and mix as you fluff up the rice.
