Strawberry Pie


Bake a single 9" pie shell in a preheated 400 degree oven for 9 minutes.

4 cups fresh strawberries
1 cup sugar
3 Tablespoons cornstarch
1/2 cup water
1 Tablespoon unsalted butter

Wash strawberries. Remove 1 cup, and crush until finely pureed. In a small saucepan on medium heat, place 1 cup crushed berries, sugar, cornstarch, and water. Heat to boiling. Boil for 2 minutes. Add 1 Tablespoon butter, mix and cool.

Fill the baked pie shell with the remaining 3 cups of whole berries. (You can roll the berries in powdered sugar if you want). Pour the glaze over berries and refrigerate the pie for at least 2 hours.

Serve with whipped cream or ice-cream.
