Tamale Filling

Makes 22 Tamales

Prep Time 1 hour and 30 minutes

Ingredients:

2 pounds pork shoulder

8 dried chili pods (Guajillo chili ) soak in water until tender

5 cups water to cook the pork and create the pork broth

2 cups water to cook the chili pods and create the chili broth

3 garlic cloves (Whole)

3 garlic cloves (Mashed)

1 yellow onion sliced in half

3 bay leaves

1 teaspoon cumin powder

2 teaspoons chicken soup base powder

1 teaspoon kosher salt

NOTE: you will need to add 1/2 teaspoon sugar + 1/2 teaspoon kosher salt

stir into the Tamale Sauce to elevate the flavor !

Masa dough

Ingredients:

3 cups instant corn masa mix

1 cup lard (melted)

1 1/2 teaspoon salt

2 teaspoons baking powder

2 cups of the cooked pork shoulder broth
