Pork Kebabs

Serves 4 (12 Kebabs)

For Marinade:
1 Lemon, Squeezed for Juice
1/4 C. Olive Oil
1/3 C. Soy Sauce
4 Finely Diced garlic Cloves
1/4 C. Rice Vinegar
3 Tbsp. Finely Chopped Ginger Root
Other Ingredients:
2 Lbs. Pork Tenderloin - Cut into Bite-Sized Cubes
1 Green Bell Pepper Cut into Large Squares (Yes, it's OK to laugh at the name of the pepper).
1 Yellow Onion Cut into Large Squares

Cooking Spray
1. Make the marinade - put the meat in it.Cover and let marinade for 30 Min - 1 Hr.
2. Soak the skewers in water so they don't burn on the grill
3. Chop all your veggies, uncover the marinade
4. Preheat grill to Medium-High
5. Have a very fun time skewering veggies and meat with your skewers. Act like pirate. Alternate meat with veggies.
6. Spray grill with cooking spray (Oil+Fire=Stand Back)
7. Turn over skewers often to cook evenly
