abbreviations used:

c = cup

T = tablespoon ie. 15ml

t = teaspoon ie. 5ml



Pumpkin Bread
(makes two loaves)

4 eggs
2¼c sugar (granulated, soft brown)
1c veg oil
14oz pumpkin puree (can or homemade)
3c flour (allpurpose, wholemeal or mix)
1T baking powder
2t baking soda
2t cinnamon
½t each of ground cloves, ground nutmeg, salt
finely grated peel of one orange
1c raisins or sultanas or other dried fruit (chopped if necessary)
1c seeds e.g. pumpkin, sunflower, flax (toasted or untoasted)

oven @ 350F (180C)
two greased 9x5" loaf pans

1. Combine eggs, sugar and oil in large bowl, whisk until evenly blended. Whisk in pumpkin puree

2. In separate bowl combine flours, baking powder, baking soda, spices and orange peel.

3. Gradually combine dry and wet ingredients, do not overbeat.

4. Fold in remaining ingredients.

5. Divide batter between pans and smooth tops. Bake approx 60-70 minutes then cool in pans for 10 minutes before turning out.
