Banana Chocolate Chip Bread

Makes 1 loaf

1/2 cup (1 stick) butter, room temperature

1 cup sugar

1/4 tsp salt

2 eggs, beaten

3 overripe bananas, mashed

2 c. flour

1 tsp. baking soda

1/2 cup semisweet chocolate chips

1/2 cup walnuts (optional)

1. Preheat oven to 425F and grease a large loaf pan. Combine all ingredients except chocolate chips and nuts (if using) in a large bowl. Beat with electric mixer until well combined. Stir in chocolate chips and nuts. Pour batter into pan.

2. Bake at 425F for 15 minutes. Reduce heat to 350F and bake for 45 more minutes, or until a knife inserted in the center comes out clean.
