Clara's Macaroni and Cheese Ingredients: 2 Cups Cooked Elbow Macaroni (It's about 1 cup raw, but what the hell...cook extra, leftover pasta in the fridge is like money in the bank) 2 Cups Milk 2 Large Eggs (If you use medium eggs as a habit, you will need to use 3) 2 Cups Sliced Cheddar Cheese (About 1/4" thick) 1 Cup Grated Cheddar Cheese Salt & Pepper to taste 1 Tablespoon butter or margarine for greasing the pan
- Preheat oven to 375
- Grease a 9" x 4" x 3" Pyrex loaf pan
- Place a layer of macaroni in the bottom of the dish ( use 1/2 of the macaroni)
- Cover the top of the pasta layer with sliced cheese
- Repeat the layer with the remaining pasta
- Add the remaining cheese to the top
- In a separate bowl - beat together the Eggs and Milk until well combined, - about 2 minutes
- Add salt and pepper to taste
- Pour the custard mixture over the pasta and cheese
- Top with the grated cheese
- Bake in the oven for 25 to 30 minutes at 375 - (check at 25 minutes, stick a knife into the center of the dish, if it is still milky, check again every 5 minutes until the center is clean)
