Oven Roasted Pork Tenderloin

1 Tbsp olive oil

1 Tbsp Cajun/Creole seasoning

1 3/4 lb pork tenderloin


Preheat oven to 500.


Rub tenderloin with olive oil.  Sprinkle seasoning over pork.  Place pork in a 9x13-in dish.


Put pork in for 15 minutes.  Turn off oven.  Do not open the door.  Let the pork sit in oven 45-60 minutes longer, until meat thermometer reads 145 degrees.
