1/2 cup butter, room temperature
1 cup white sugar
3 eggs, divided (1 whole, 2 separated)
1 1/2 cups flour
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla
1/2 cup semi-sweet chocolate chips
1 cup mini marshmallows
1 cup brown sugar
Preheat oven to 350 degrees.
Beat together the white sugar and butter until creamy. Beat in 1 whole egg and 2 egg yolks (put aside the whites for later). Mix in the flour, baking powder, salt and vanilla. Spread into a lightly greased 9x13-inch pan.
Sprinkle marshmallows and chocolate chips on top of unbaked cookie crust.
Beat egg whites until stiff peaks form. Fold in the brown sugar. Spread the meringue mixture over the marshmallows and chocolate chips.
Bake for 30 minutes.
Cool in pan and cut into squares.
