Cheesy Baked Rigatoni

  • 12 oz rigatoni noodles
  • 1 lb Italian Sausage or ground beef
  • 1 (26-28oz) jar spaghetti sauce
  • 1 cup sour cream
  • 4 oz cream cheese, softened
  • 1 cup cottage cheese (2% small curd)
  • 1 cup shredded mozzarella cheese
  • 1 Tbsp dried parsley
  • 1/2 cup grated parmesan cheese

Preheat oven to 375. Spray a 9x13-inch pan with cooking spray. Set aside.

Cook noodles according to package directions. Drain and set aside.

In a large skillet, brown sausage or beef. Drain fat. Add spaghetti sauce and noodles. Toss to combine. Pour into 9x13-inch pan.

In a large bowl combine sour cream, cream cheese, cottage cheese, mozzarella and parsley. Spread over noodles. Top with grated parmesan cheese.

Bake for 35-40 minutes.
