Caprese Chicken Pasta

  • 4 boneless chicken breasts
  • 2 cups balsamic vinaigrette dressing
  • 1 (28oz) can whole tomatoes
  • 1 Tbsp dried onion flakes
  • 3 cloves garlic, pressed
  • 1/4 tsp red pepper flakes
  • 1 Tbsp dried basilĀ 
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 lb penne pasta
  • 8 oz fresh mozzarella pearls


Marinate chicken in balsamic vinaigrette for 2 hours up to overnight. Remove chicken from marinade and grill until done.


While chicken is cooking, boil pasta according to package directions. Drain and set aside.


Puree the tomatoes until smooth in a food processor. Pour into Dutch oven. Add onion, garlic, red pepper, basil, sugar, salt and pepper. Simmer for 15-20 minutes.


Remove from heat. Toss pasta in sauce. Stir in mozzarella cheese. Serve with grilled chicken.
