Whole Wheat Cinnamon Oatmeal Pecan Raisin Cookies from Pinay In Texas Cooking Corner 


Yield 36 pcs. large cookies

  • 2 cups whole wheat flour
  • 1 Tbsp cinnamon powder
  • 2 cups quick-cooking oats
  • 1 cup chopped pecans
  • 1 cup raisins
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter, softened
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp pure vanilla extract


1. Preheat oven to 350°F. Line 2 cookie sheets with parchment paper. In a bowl, combine flour, cinnamon, baking soda and salt.

2. In another bowl, cream butter and sugars using an electric mixer on medium speed until light and fluffy. Add eggs and vanilla and continue mixing until well combined. Reduce speed to low. Gradually add flour mixture and beat until well incorporated. Stir in oats, pecans and raisins.

3. Drop rounded mounds of dough (about 1 Tbsp to 2 Tbsp depending on desired size) onto prepared baking sheets. Bake in preheated oven for 10 to 12 minutes. Let the cookies cool a few minutes on the baking sheet. Transfer to a wire rack to cool completely. Store in airtight container.
