Yield 1 dozen muffins

  • 2 cups all purpose flour
  • 1 Tbsp baking powder
  • 1/4 tsp. salt
  • 1/2 cup sugar
  • 1 cup buttermilk
  • 1/3 cup olive oil
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 cup semisweet chocolate chips
  • 3 Tbsp white sugar & 3 Tbsp brown sugar (for crust)

Slowly add the mixture into the sifted dry ingredients and fold until everything is well incorporated. Gently fold in chocolate chips.

3. Divide the batter between the 12 muffin cups. Mix the white sugar and brown sugar until well combined. Sprinkle on top of the batter in the muffin cups. Bake for 15-20 minutes in preheated oven or until a toothpick inserted in the middle comes out clean.
