Pork and Mushrooms in Teriyako Sauce

Pork and Mushrooms in Teriyaki Sauce from Pinay In Texas Cooking Corner

  • 2 lbs. pork cut into cubes (I used country style ribs)
  • 2 cups fresh button mushrooms, sliced
  • 2 Tbsp olive oil
  • 1 Tbsp minced ginger
  • 6 stalks green onions, chopped
  • 1 Tbsp roasted sesame seeds
  • 1 Tbsp garlic powder
  • 1 tsp salt
  • 1/4 tsp pepper

For the Sauce:

  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup cooking sake
  • 3 Tbsp brown sugar

1. Sprinkle pork with garlic powder, salt and pepper. Let sit for at least 10 minutes.

2. Meanwhile, mix sauce ingredients in a small bowl until sugar is dissolved. Set aside.

3. In a large skillet over medium heat, saute pork and ginger in olive oil until juice from pork starts to come out.

4. Pour sauce into skillet. Simmer for 30 minutes or until pork is almost cooked and tender. Add mushrooms and stir until well combined with pork. Simmer for 5 more minutes or until almost cooked. Add the green onions and sesame seeds. Simmer for 2 minutes more. Remove from heat. Serve hot with rice.
