Godiva Pumpkin Spice Coffee Flavored Cinnamon Roll from Pinay In Texas Cooking Corner

  • 4 cups bread flour
  • ¼ oz. package active dry yeast
  • ½ cup warm Godiva Pumpkin Spice coffee, brewed according to package instructions
  • ½ cup warm milk
  • ¼ cup sugar
  • 1/3 cup butter
  • 1 tsp salt
  • 1 egg

  • ½ cup melted butter
  • ¾ cup packed brown sugar
  • 2 Tbsp ground cinnamon
  • ¾ cup chopped pecans

  • 4 Tbsp butter
  • 2 cups confectioner's sugar
  • 1 tsp vanilla extract
  • 6 Tbsp hot brewed Godiva Pumpkin Spice coffee
* 1/4 cup milk or cream for basting

1. In a large mixing bowl, combine flour, yeast, sugar and salt. Mix well. Add cofee, milk, butter and egg. Mix until well combined. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1½ hours.

2. When doubled in size, roll out on a floured surface into a 15" by 9" rectangle. Spread melted butter evenly all over dough. Mix sugar, cinnamon and pecans and sprinkle over buttered dough. Beginning at the 15" side, carefully roll the dough into a log and pinch the edges to seal. Cut the log into 12 equal slices.

3. Lightly grease the bottom of 13 x 9 x 2 inch baking pan with butter then sprinkle with sugar. Arrange cinnamon roll slices close together in the pan and let rise until dough is doubled, about 30 minutes. Preheat oven to 350 degrees F. Bake for 30 minutes or until nicely light brown. In the middle of baking brush cinnamon rolls with milk or cream.

4. Meanwhile, mix butter, confectioner's sugar and vanilla in a bowl. Add hot coffee 1 tbsp at a time until the glaze reaches desired consistency. Spread over warm rolls. Serve.
