This has to be the most decadent, fattening and more-ish dessert in the known Universe.
Neil visited his birthplace, Scotland, and was given this dessert by someone. He brought the recipe home to his mother, Jean. She made this for a dinner party that we hosted. It was the most memorable part of the meal; everyone of us went to get another helping!
- 1/2 cup of butter
- 2 cups icing sugar
- 2 eggs
- 3 cups flour
- 8 oz dates soaked in spirit/liqueur (cognac, Glayva etc)
- 1 tsp soda
- 2 cups bioling water
Cream the butter and sugar unitl white and fluffy. Gradually add eggs and flour alternately. Pour boiling water iver dates & soda. Wait until the water is all absorbed, then add to cake batter. Bake in 9x13 inch tin at 350 degrees Fahrenheit for 40 mins.
Sauce (now we get to the decadent part):
- 1 cup butter
- 2 3/4 cups brown sugar
- 1 pint (20 fl. oz./500 ml) whipping cream
Boil together and pour half over cooked cake, having poked holes in cake. Serve the other half warm with the cake.
