During our rides, several folks bring treats.  Several asked for some recipes from our last rally.

Blueberry Bread / Coffee Cake
  • 3/4 C sugar
  • 1/4 C margarine / butter
  • 1 egg
  • 1 t vanill
  • 3/4 C milk
  • 1-3/4 C  + 2 T flour
  • 1 T baking powder
  • 1/2 t salt
  • 1-1/2 C blueberries (or enough to cover the bottom layer of batter)
Cream sugar, margarine, egg and vanilla thoroughly.  Add milk and blend well.  Combine flour, baking powder and salt.  Add to creamed mixture, stirring only until all flour mixture is moistened.  (Batter will be thick)
Spread 1/2 of batter in greased loaf pan (for bread) or 9 inch square pan (for coffee cake).  Spread blueberries over batter and sprinkle with 2 T sugar.  Cover blueberries with remaining batter and sprinkle top with mixture of 2 T sugar and 1/2 t cinnamon.
Bake at 375 for 40-45 minutes for break and 35-40 minutes for coffee cake - or until it tests done.

Lemon Chia Seed Cookies (makes 35-40)
  • 2 C all purpose flour
  • 1 t of baking powder
  • Dash of salt
  • 1 T + 2 t chia seeds
  • 1/2 C butter or margarine - softened
  • 3/4 C sugar
  • 2 t lemon juice
  • 2 t grated lemon zest
  • 1 egg - beaten
  • 1 t vanilla extract
Lemon Icing
  • 2-1/2 t lemon juice
  • 1/4 C + 1 T powdered sugar
Preheat oven to 350.  Use large bowl to whisk flour, baking powder, salt and chia together. Set aside.
Use electric mixer to cream butter and sugar till light & fluffy.  Add lemon juice, grated lemon zest, beaten egg & vanilla.
Gradually add flour mixture to wet mixture just until combined.  Using lightly floured rolling pin, roll dough out over a floured surface and cut into desired shapes and place on cookie sheets.  Bake 10-15 minutes until ledges are light brown.  Let cool for a few minutes after removing from oven before placing on a wire rack to cool completely.
Whisk icing ingredients together and drizzle over cookies.

Chia seeds are high in omega 3 and were used by the Aztecs for endurance.
