Healthified Cookie Pie

Adapted by Lindsay at Perfecting the Pairing from Chocolate Covered Katie

 

Ingredients:

·         1, 15 oz, can white beans (white kidney beans) or garbanzo beans, drained and rinsed

·         ½ cup quick cooking oats

·         1/8 cup unsweetened applesauce

·         1 ½ Tb canola oil

·         1 tsp vanilla

·         ¼ tsp baking soda

·         1 tsp baking powder

·         ¼ tsp salt

·         ¾ cups brown sugar

·         ½ cup chocolate chips

Directions:

Preheat your oven to 350 degrees F.  Grease a pie plate with cooking spray.

In the bowl of a food processor add all ingredients except for chocolate chips.  Process the mixture very well until it is smooth, scraping down the bowl once or twice. Stir in the chocolate chips.  Pour the mixture into the pie plate.  Bake for 25-30 minutes, or until lightly browned.
