Creamy Shrimp Dip

  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 Tb horseradish
  • 3 Tb fresh lemon juice
  • 1 cucumber, peeled, seeded and chopped
  • 1 lb cooked shrimp, peeled, deveined and chopped
  • 3 green onions, chopped
  • ¼ cup chopped fresh dill
  • ½ tsp salt, more to taste
  • Pepper, to taste


Whisk the mayonnaise, sour cream, horseradish, and lemon juice in a large bowl.  Add the chopped cucumber, shrimp, green onions, dill, and salt.  Fold together with a spatula until evenly combined.  Taste and season with salt and pepper.  Let sit in refrigerator for about 2 hours before serving.  Great with crackers or cucumber slices.
