Creamy Goat Cheese, Pesto and Burst Tomato Dip

  • 1 pint grape tomatoes
  • 1 Tb olive oil
  • 1 tsp Italian seasoning
  • 4 oz goat cheese
  • ¼ cup cream cheese
  • ½ cup prepared pesto
  • Salt and pepper, to taste


Preheat the oven to 400 degrees.  In a bowl toss the tomatoes, olive oil, Italian seasoning and salt and pepper, to taste.  Toss onto a greased cookie sheet and roast, tossing occasionally, for 25-30 minutes.  The tomatoes should just start to burst. In a food processor combine the goat cheese and cream cheese, process until smooth and season with salt and pepper, to taste.  Spread the cheese mixture on a platter and top with pesto and roasted tomatoes.  Serve with crackers.
