Coconut Curry Fish

·         Zest and juice of one lime

·         1 tsp cumin

·         1 tsp ground coriander

·         2 Tb soy sauce

·         1 tsp salt

·         2 Tb brown sugar

·         2 tsp curry powder

·         ½ cup light coconut milk

·         ¼ tsp cayenne pepper

·         4 tilapia filets

·         Optional toppings:  cilantro and toasted coconut


In medium sized baking dish combine the first 9 ingredients, through cayenne.  Whisk to combine.  Add the fish, cover with the marinade.  Let the fish marinate for at least 30 minutes.  Preheat oven to 400 degrees F.  Cook fish in marinade for 12-15 minutes, until fish flakes easily.  Serve with cilantro and toasted coconut.
