Caribbean Curry Chicken

You will need:

2 lbs chicken, cubed

2 tbsp Grace Caribbean Tradition curry powder

3 cloves garlic

3 green onions

1 sprig thyme

2 oz cooking oil

1/2 to 1 cup water

Salt & Pepper

  • Mix curry powder, crushed garlic, sliced onion, thyme and salt & pepper with chicken
  • Marinate 15 - 30 minutes or overnight for best results
  • Heat oil in skillet, add meat, saute 5 minutes
  • Add water as necessary to meat and simmer until cooked
Serve with rice, steamed veggies or - in our case - roti skins.
