BAKED ORANGE ROUGHY with HORSERADISH DIJON AND PARMESAN

Ingredients:

2 (6 ounce) orange roughy fillets

2 tablespoons lemon juice

½ cup Parmesan cheese, grated

3 tablespoons mayonnaise

1 tablespoon Dijon mustard

2 teaspoons horseradish

½ teaspoon seasoned pepper

Hungarian paprika

Method:

Preheat oven to 400°.

In a small bowl mix together, juice, cheese, mayonnaise, mustard, horseradish and pepper.

Place fillets in 13 x 9-inch baking dish sprayed with cooking spray.

Spread with Parmesan mixture.

Sprinkle with paprika.

Bake for 20 to 25 minutes, or until fish flakes easily with a fork.
