Serves 12 (heavy 2/3 c. serving)
Roast the sweet potatoes in a 400 degree oven for 35-40 minutes, until completely tender. in a bowl, mash together the potatoes, margarine, bourbon and salt. Add the syrup, molasses and almond milk and continue to mash.
Serve, or refrigerate overnight and reheat in a 300 degree oven for 30 minutes. Stir in about another 1/4 cup almond milk if you serve the next day.
