Turkey Hash

*Turkey Hash*
Serves 4

This dish is something I like to do with leftover turkey.  It's really simple to make and quite delicious.

4 baking potatoes, washed well and cut into chunks
1 sweet potato, washed well and cut into chunks
1 carrot, peeled and cut into chunks
60ml chicken stock (1/4 cup)
2 TBS olive oil
320g of cooked turkey, cubed (about 3 cups)
1 medium brown onion, peeled and diced
1 tsp seasoning salt
1 tsp garlic powder
1/2 tsp black pepper
1/2 tsp mild chili powder
pinch crushed red peppers, if desired
120g grated cheddar cheese (1 cup)
4 spring onions, trimmed and thinly sliced

Heat a large skillet with a lid,  Add the baking and sweet potatoes, carrot, onions and chicken stock.  Cover and cook over low heat until the vegetables are just tender, and the stock has been absorbed, about 10 minutes.   Add the oil and toss to coat.  Add all of the seasonings and the turkey.  Toss together and cook to brown the potatoes lightly and heat everything through.   Scatter the spring onons on top and the cheese.  Cover and set aside to let the cheese melt.  Serve hot.
