*Bacon Wrapped Salmon* Serves 2
I love fish. It's good for you, quick to cook and delicious!
2 (250g) salmon filets (4 ounces each) 4 rashers of thin cut smoked streaky bacon several sprigs of fresh thyme drizzle of olive oil freshly ground black pepper
lemon wedges Preheat the oven to 200*C/400*F/ gas mark6. Have ready a small glass baking dish. If desired, skin your salmon filets. I don't like skin on mine, and so I like to remove it. It's not that hard to do. Tuck the thin end under the thicker end. Top each with a spring of fresh thyme. Wrap each with two rashers of bacon, stretching it slightly and making sure the ends are tucked onto the bottom when you place them into the baking dish. Drizzle with a bit of olive oil. Bake for 15 to 20 minutes until the salmon is just cooked through and the bacon is golden brown. Take care not to overcook the salmon. Squeeze some lemon over top and serve. |
