*Another Oatmeal Cookie*
Makes about 30 cookies This is a delicious cookie recipe adapted from Rachel Allen's cookbook "Bake." She suggested adding chocolate chips in addition to the raisins or instead of the raisins. I added half raisins and half cinnamon chips which some kind person had sent me. Fabulous! 110g of butter, softened (1/2 cup) 110g of caster sugar (generous half cup) 110g of soft light brown sugar (scant half cup, packed) 1 large free range egg, beaten 2 TBS water 1 ts vanilla extract 250g of old fashioned porrage oats (generous 3 cups) 110g of self raising flour (3/4 cup) 1 tsp salt 110g of raisins (3/4 cup) Chocolate chips (optional)
Preheat the oven to 180*C/350*F/ gas mark 4. Line a couple of large baking trays with paper. Set aside. Cream together the butter and sugars until light and fluffy. Beat in the egg, water and vanilla. Stir in the salt, flour, and oats until well combined. Stir in the raisins and or chocolate chips if using. Shape into walnut sized balls and place several inches apart on the prepared baking sheets. Bake for about 15 minutes, until puffy and golden brown. Let cool on the baking sheets for a couple of minutes before scooping off onto a wire rack to finish cooling. Store in an airtight container. |
