Slow Cooker Size: 3 1/2 to 6 qt.
12 skinless chicken thighs or drumsticks
1 tsp dried thyme
1/2 tsp salt
1/2 tsp black pepper
2 apples, unpeeled & thickly sliced
1 onion sliced
1/2 cup apple juice or cider
1 1/2 tsp cider vinegar
1 tbsp cornstarch
1. Place chicken in slow cooker. Sprinkle with thyme, salt & pepper;
2. Add apples & onions. Pour apple juice or cider over chicken;
3. Cover and cook on LOW for 5 to 7 hours, or on HIGH for 2 1/2 to 4 hours, or until chicken is no longer pink inside;
4. In a small bowl or jar, combine cider vinegar and cornstarch. Whisk into slow cooker. Cover and cook on HIGH for 15 to 20 minutes more, or until thickened. Spoon over chicken.
Serve over rice if desired.
YIELDS: 4 to 6 servings
