Boutique Catering Sample: "Lunch Boxes by Bean"

Each seasonal lunch box menu includes House-Made Sweet Potato Chips dusted with Creole Salt, House-Made Farmers Market Pickle and a Daily Sweet in addition to disposable flatware and napkins.  Boxes are individually packaged by hand and all sandwiches are prepared on House-Made Foccacia.

Rare Roast Beef sliced thin with Red Onion Marmalade, Roast Garlic-Horseradish Aioli, Fresh Spinach and Dijon Mustard

Lunch Box #2

Chickpea Hummus with Sliced Tomato, Kalamata Olives, Pepper-Jelly Vinaigrette dressed Spinach and Maras Farm Sprouts

Lunch Box #3

Classic BLT with crispy McLeod Farm thick cut Hickory Smoked Bacon, Sliced Tomato, Baby Lettuce and Roast Garlic Mayo

Note:

There is a minimum order of 8 lunch boxes for each order. All lunch box orders must be requested by noon two  days  prior to delivery.  Cancellations are accepted until noon of the day prior or upon discretion of the kitchen.  All orders are subject to a 9% Louisiana sales tax unless a Tax Exempt Certificate is provided.  A ten dollar ($10.00) delivery charge is applicable to orders consisting of less than 15 box lunches.  Every effort will be made to accommodate last minute changes and cancellations with a possible surcharge added. All lunch boxes excluding Vegetarian lunch box elections are $10.00 each. All other lunch box selections are $12.00. Below is a menu that was created for Cheryl Forchelli.  The event was an Hors d'Ouerves based tasting that was passed by uniformed waitstaff and plated for 40 guests.

Assorted Sushi Rolls:  Smoked Salmon, Cucumber and Broccoli Sprout Roll, Pickled Carro, Sesame Spinach and Egg Strip Roll, Spicy Tuna with Avocado and Tempura Crunchy Roll seved with Wasabi, Pickled Ginger and Assorted Soy Sauces

These sample menus are created on a seasonal basis and can be created to host groups as small as 2 and for groups as large as 35. 

Winter Dinner #1:

Roasted Butternut Squash and Crème Fraiche Soup with a Relish of Soft-Fried Garlic, Crispy Pancetta Shards and Fresh Thyme< namespace="" prefix="o" ns="urn:schemas-microsoft-com:office:office" xml="true">

The GOODIES list is our weekly generated menu based on seasonally fresh ingredients from New Orleans' own Crescent City Farmers Market.  Straight from the farmers market to your table, we create GOODIES to get you through your busy week with full delivery service and/or pick-up available.  If you would like to join our  GOODIES email list please send your name and email address to nolabean@gmail.com

Creamless Creole Tomato and Dill Bisque-can be enjoyed hot or cold, delicious because of its simplicity

Cold Cucumber Yogurt Soup-served cold, spiced with fresh dill, lemon and a hint of fresh mint

Organic Garbanzo Bean Hummus-perfected with lemon, garlic and roasted Sesame Tahini, comes with a bag or our addictive Paprika Spiced Pita Chips

Gazpacho Salsa with Baked Tortilla Chips-truly great salsa, made with Louisiana Creole Tomatoes, diced Avocado, Cilantro, Peppers and a bag of good for you Tortilla Chips

Tabouleah Salad-Cracked Bulghur Wheat with diced Red Onion, Cucumber, Tomato, Parsley, Lemon and Mint

Broccoli Couscous Salad-blanched chopped Broccoli with Whole Wheat Couscous, roasted Red Pepper, Feta Cheese, Capers and Oregano

Green Curry Rice Noodle Salad-roasted Sweet Potatoes tossed with wide Rice Noodles, Green Curry Paste, fresh Cilantro, Shallots, Lemongrass and Coconut Milk, garnished with crushed, Salted Peanuts

Granola-Apricot, Mango and Toasted Almond Granola, made with juices to cut down on the sugar and vegetable oil so there are no Trans Fats!  Flecked with toasted, ground Flax Seed; a great source of  Omega 3 Fatty Acids and Wheat Germ; a fine source of Folic Acid and Vitamin E. 

Deliveries will be made from 10:00am to noon. Below is a brief list of what we offer in the pastry department, however, our seasonal cakes change often.  We want to help you create the cake of your dreams to celebrate your special occasion(s) while working exclusively with what the Louisiana seasons have to offer. 

Wedding Cakes, Winter:

Spiced Gingerbread Cake with Candied Pistachio Brittle layered with Cranberry Mousse, Cream Cheese Frosting and Decorated with Marzipan Fruits

 

Toasted Coconut Cake soaked with a Rum Syrup and layered with Bittersweet Almond Buttercream, Fresh Mango Mousse-Rubbed with Toasted, Unsweetened Coconut Powder and garnished with assorted Sliced Tropical Fruit

 

Dark Chocolate and Chestnut Cream Cake layered with Hazelnut Buttercream, glazed with Bittersweet Chocolate Mousse and garnished with Marrons Glace and Sugared Laurel Leaves

 

Champagne Cake layered with a White Chocolate Buttercream, covered in White Fondant and garnished with Sanding Sugar and Almond Dragees.

 

Orange Chiffon Cake layered with Louisiana Satsuma Curd, Meyer Lemon Curd, Grapefruit Curd, covered in a Traditional Ivory Buttercream and garnished with Candied Citrus Peels, Kumquats and Sugared Citrus Leaves.

 

Speciality Cakes, Winter:

Carrot Cake-Traditional Carrot Cake accented with Toasted Coconut, Roasted Walnuts, Satsuma Juice and Fresh Ginger.  Covered in Meyer Lemon Cream Cheese Frosting and garnished with Toasted Coconut and Crushed Walnuts

Chocolate Buckeye Cake-Rich Bittersweet Chocolate Cake layered with Peanut Butter Mousse, Sugared Peanuts and garnished with Chocolate Covered Buckeyes

Apple Spice Cake layered with House Made Apple Butter, Caramel Buttercream and Toasted Apple Chips
