Whilst still eating meat, we have seriously cut down both in terms of the quantities and the frequency that we eat it. A lot of the following recipes are 'slow' food - dishes that are cooked long and slow using cheaper cuts, so are more suited to weekend cooking and can be scaled up or down according to how many people that you are feeding.
