Low Carb Sweet and Sour Chicken

Ingredients:
1/4 cup rice vinegar
1/4 cup water
1/4 cup low sugar ketchup
1 T. soy sauce
1/4 t. salt
1/2 t. garlic powder
3 T. Swerve or no calorie sweetener of choice
1/4 t. xantham gum
1 pound boneless, skinless chicken breasts
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
minced garlic, 1-2 cloves depending on your taste
minced ginger, 1/2-1 t. depending on your taste
Coconut oil

Instructions:
Whisk together the sauce ingredients: rice vinegar through xantham gum
Cut chicken and peppers into chunks
Simmer sauce in a small saucepan over low-medium heat while cooking the chicken and peppers. Whisk occasionally while simmering.
Heat 1 tablespoon of coconut oil in a large pan or wok over medium-high heat. Cook chicken with the garlic and ginger for 4-5 minutes to brown. Remove and set aside.
Heat another tablespoon of coconut oil and stir fry peppers for 4-5 minutes. Add the chicken back in and stir fry until fully cooked. Add the sauce to the chicken and peppers and serve over cauliflower rice.
