Overnight Cinnamon Rolls


For the dough:
2 cups water
1 cup sugar
1/2 cup margarine
1/4 cup warm water
1 tsp instant yeast
2 eggs, lightly beaten
1 tsp vanilla extract
5 1/2-6 cups all purpose flour
1/2 tsp salt
1 tsp cinnamon

For the filling:
1/2 cup butter
1/4 cup brown sugar
1 tsp cinnamon
3 T white sugar
1 T honey

For the icing:
2 cups sugar
1 cup heavy whipping cream
1 tsp vanilla extract

Directions for the dough: 
1) Starting in the late afternoon/evening, bring water and 1 cup of sugar to a boil
2) Remove from heat and add margarine.
3) Allow to cool
4) Once cooled, dissolve yeast in 1/4 cup warm water
5) Add eggs, vanilla, and salt and mix.
6) Beat in 1/2 the flour.
7) Stir in remaining flour.
8) Knead until smooth. It will remain a sticky dough.
9) Grease a large bowl and transfer dough to bowl. 
10) Flip to grease both sides.
11) Cover with wax paper and damp towel.
12) Place in a warm place to rise until doubled in size
13) Punch dough down and turn out on floured surface.
14) Knead about a minute and cover and rest for 10 minutes.
15) Roll out in a 14x14 square.
16) Brush with filling mixture (see below).
17) Roll up and slice into 1/2 inch slices
18) Unroll two slices and connect them, making one large roll.
19) Place in greased 11x15 baking pan.
20) Cover with GREASED wax paper and damp towel.
21) Place in warmed oven (turn on lowest setting for 10 minutes, turn off, leave door cracked for 5 minutes and then close) overnight.

Directions for Filling:
1) Melt butter in bowl
2) Add remaining ingredients and stir until combined.

************Next Morning**************
1) Remove rolls from oven and preheat to 350 degrees.
2) Bake for 17-20 minutes or until done.
3) If desired, place a small slit in the middle of each cinnamon roll before icing to allow it to seep into them.
4) Ice while still hot.

Directions for icing:
1) In a saucepan, bring the sugar and cream to the soft ball stage.
2) Remove saucepan from heat and plunge into a pan of ice water.
3) Stir until starting to thicken.
