Cappuccino Muffins with Espresso Spread

Muffin Ingredients:
2 cups all-purpose flour
3/4 cup sugar
2-1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
1 cup milk
2 T instant coffee granules
1/2 cup butter, melted
1 egg
1 tsp vanilla extract
1 cup mini semisweet chocolate chips

Espresso Spread Ingredients:
4 oz cream cheese, cubed and softened
3/4 cup sugar
1/2 tsp instant coffee granules
1/2 tsp vanilla extract
1/4 cup mini semisweet chocolate chips

1) Preheat oven to 375 degrees.
2) In a large bowl, combine flour, sugar, baking powder, cinnamon, and salt. 
3) In a small bowl, stir milk and coffee granules until dissolved.
4) In another small bowl, beat egg lightly. Add butter and vanilla; mix well. May be clumpy.
5) Stir into dry ingredients until moistened.
6) Fold in chocolate chips
7) Fill greased muffin pan 2/3 full and bake for 17-20 minutes or until toothpick comes out clean.

Espresso Spread:
1) Blend all ingredients for spread in a food processor or blender until well blended. Refrigerate until serving. 

Yield: approx 14 muffins and 1 cup spread
