Cherry Orange Blossom Water Cakes
Recipe from Tartelette

2 cups flour
3/4 cup sugar
2 eggs
2 Tb. olive oil
1/2 cup milk
2 tsp to 1 Tb orange blossom extract
1 tsp. baking powder
grated zest of one lemon
pinch of salt
1 cup fresh (or frozen) pitted cherries

In a large bowl, whisk the eggs, sugar, oil, milk and extract.
Sift the flour, baking powder and salt. Add to the wet ingredients. Fold in the cherries.
Bake at 350 F, for 20-25 minutes.
