Blackberry Financiers
Recipe from Tartelette

Makes 12

115 gr. butter (1 stick)
100 gr powdered sugar (1 cup)
60 gr ground almonds (1/2 cup)
30 gr all purpose flour (1/4 cup)
pinch of salt
4 large egg whites
1 cup blackberries

Preheat your oven to 375F. In a medium saucepan over medium high heat, melt the butter until it turns to a rich hazelnut brown color. Strain it and let cool to room temperature.
Sift together the powdered sugar, flour, ground almonds and salt. In the bowl of a stand mixer fitted with the paddle attachment, add the flour mix, add the egg whites and mix until all the ingredients are combined on low speed. Add the brown butter, increase the speed and beat until smooth.
Divide the batter among 12-15 financier molds or muffin tins, add a few blackberries on top and bake for about 15 minutes or until golden brown. Let cool, if you can, before eating.
