Sweet Toasted Corn Meal Candy (Gofio)

 


Gofio, the most ancient and most traditional of candies in Puerto Rico dating back to the Tainos.

As a child I used to love filling my mouth with this sweet powder that came wrapped in paper cones of different bright pastel colors....and I still do! This was originally prepared using dry corn grain that would be ground in a big mortar. Today we just use regular medium grain corn meal toasted along with sugar.

INGREDIENTS:

1 cup medium grain corn meal

1 cup sugar

DIRECTIONS:

  • Place corn meal in non stick pan over medium heat.
  • Contastantly stir to avoid scorching until a light toasted brown color.
  • Remove from heat.
  • Empty into bowl.
  • Thoroughly mix with sugar.
  • Bring to room temperature.
  • Serve in multi colored paper cones and seal ends.
