Corn Meal Fritters(Sorullitos)


I love these little corn meal fritters, they make a great hot snack! They are simple to make but may take a little practice to get perfect. There are many variations of sorullitos throughout the various regions of Puerto Rico. Some are sweet (the way I like them), some are salty, some are stuffed with cheese or even with a salsa.

3/4 to 1 cup milk

1 cup corn meal

1/2 cup all purpose flour

1 egg

2 tablespoons sugar

oil (for frying)



  • Mix all ingredients with exception of milk and oil.
  • Heat milk in saucepan over mdium and remove saucepan from heat when milk gets hot (do not allow to boil).
  • Whisk hot milk into mix a little at a time until it has a consistent but not liquidy texture. You will end up using about 3/4 cup of hot milk.
  • Heat oil on medium heat.
  • Meahwhile form sorullos to miniature "hot dog" shapes about 2 inches long.
  • Carefully place sorullos in heated oil and fry turning once so that they are golden brown on both sides.
  • Remove sorullos from frying pan and drain on a plate lined with paper towel.
  • Serve immediately plain or with a dipping "sauce" of 1/4 cup ketchup, 1/4 cup mayonnaise and 1 head of garlic and a little Pique (Homemade Puerto Rican Hot Sauce) minced all mixed together.
