1 cup coconut milk

2 cups milk

3/4 cups sugar

3 cinnamon sticks

2 rings orange rind or 2 sour orange leaves

1/2 cup rice flour


  • Mix sugar and flour together in large saucepan.
  • Add rest of ingredients and cook over medium heat.
  • Continue to whisk until thickened.
  • Remove cinnamon sticks and orange rind.*
  • Pour into mold and refrigerate.
  • Garnish with cinnamon powder.

* It is not necessary to remove the cinnamon sticks and orange rind or leaaves once the pudding is poured into the mold.  If it is left in the mixture it will continue to add flavor to the dessert as the days go by.
