There is nothing more comical than going to market for an unfamiliar ingredient and trying to describe it to the clerk who is giving you weird looks!

SPANISH CHORIZO (seasoned, smoked pork sausage flavored with garlic, chili powder and other spices and is widely used in  Spanish cooking.  It's usually sold whole,  cut lengths or in rounds and being dry-cured, can be just sliced and eaten or added to dishes)

 

 

MEXICAN CHORIZO (made with fresh pork and is moist .  It's also highly seasoned but being soft-cured,  it must be cooked  first. The casing should be removed and the meat crumbled or chopped before cooking. They are often sold in links)
