Southwestern Chicken & Lima Bean Soup

Ingredients:

1.5 lbs cooked, shredded chicken

2 C frozen lima beans

2 C frozen corn

1 C chopped peppers

1 C chopped onions

2 (14oz) cans fire-roasted diced tomatoes, undrained

1 can tomato paste

2 C water

5 tbsp minced garlic

1 1/2 tsp cumin

1 1/2 tsp oregano

1/2 tsp pepper


Directions:

1. In a large saucepan, combine all the ingredients.

2. Stir well.

3. Bring to a boil.

4. Reduce heat and simmer for 1 hour.
