Lemonade Cookies - - Mardi Gras to Mistletoe


  • 2-3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup butter, softened (2 sticks)
  • 3/4 cup sugar
  • 1-1/4 cups sweetened lemonade mix
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract or 1 tsp grated lemon zest


01. Preheat oven to 350ºF. Grease cookie sheets; set aside. 

02. Mix together the flour and baking soda; set aside.

03. In a mixing bowl, beat the butter, sugar and 3/4 cup of the lemonade mix until fluffy.

04. Add the egg and flavorings; beat until blended. Beat in the flour mixture until a smooth dough forms.

05. Pour the remaining 1/2 cup of lemonade mix into a shallow dish.

06. Shape the dough into 1-inch balls and coat with the lemonade mix.

07. Arrange 2-inches apart on a prepared cookie sheet and bake in the preheated oven until brown around the edges, about 10 to 12 minutes.

08. Cool on the cookie sheet for 2 minutes and remove to a wire rack to cool completely. Store in an airtight container.
