Crawfish Bread - - Mardi Gras to Mistletoe


  • 1 wide loaf French bread
  • 1 pkg sliced deli-style Mozzarella cheese
  • 1/4 cup extra-virgin olive oil
  • 2 Tbsp butter
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 tsp minced fresh garlic
  •  1-LB frozen crawfish tails
  • 2 bay leaves
  • 1-1/4 Tbsp Cajun seasoning
  • 2 tsp sugar
  • 1/2 tsp tarragon
  • 1/16 tsp celery salt
  • 4-oz mild Cheddar cheese, shredded
  • 1 pkg sliced deli-style Swiss cheese


01. Cut a horizontal slice from the top of the bread loaf and reserve.

02. Scoop out the center of the loaf, leaving a 1-inch shell.

03. Line the bottom of the shell with a 1-inch ;ayer of the Mozzarella.

04. In a large skillet, heat the olive oil and butter until the butter melts. Then add the onion, bell pepper and garlic; sauté until the onion is tender.

05. Stir in the crawfish tails and cook until they begin to wilt. Reduce heat and stir in the Cajun seasoning and next 3 ingredients.

06. Simmer, stirring occasionally, for 5 to 10 minutes, or until the desired consistency is reached.

07. Discard the bay leaves and mix in the Cheddar cheese. Pour over the Mozzarella cheese in the bread shell.

08. Layer with the Swiss cheese and cover with the reserved bread top.

09. Wrap in foil and bake at 400ºF for 10 to 15 minutes.

10. Slice and serve immediately.
