Vietnamese omelet (Banh Xeo)

It will be helpful to use a nonstick pan for this recipe.

Makes 10 servings

1 bag of Banh Xeo Mix (flour)

1 LB pork belly thinly sliced

1 LB shrimp

1 bag bean sprouts

1 yellow onions

4 small shallots

1/2 chopped green onion

1 bunch green onion cut into 1 inch slices

31/2 cups water

1 cup coconut cream

Slice pork thinly and stir fry for 15 minutes or until cooked stir in1 teaspoon kosher salt, 1/2 teaspoon sugar 1/2 mushroom seasoning and pepper

Bánh xèo [ɓǎɲ sɛ̂w], literally "sizzling cake also crepe" is named for the loud sizzling sound it makes when the rice batter is poured into the hot skillet. Also called Vietnamese Pancake and Vietnamese Crepes. There is (No Egg) in Bánh xèo the yellow

color of the crepe is due to the yellow color of the turmeric powder.

For this recipe we used pork belly, however a leaner cut of pork such as pork shoulder could be used.
