Lentil Soup

INGREDIENTS
-16 oz of lentils rinsed
-3 cups water
- 2 cups low sodium chicken broth
-2 celery stalks diced
- 3 carrots diced
- 1 large onion
-3 cloves garlic
-  14 oz can of diced tomatoes
- 1/2 tsp cumin
-1 tsp paprika
- 1 bay leaf

DIRECTIONS
- Heat 1 1/2 TBS olive oil in heavy bottom pan 
-Saute vegetables and garlic until softened ( about 3 minutes)
-Add chicken broth, water, tomatoes, lentils and spices and bring to boil
-Reduce to a  low simmer and cover for 1 1/2 -2 hours

**Serving size eight 1 cup servings**
