* Cous-Cous Veggie Wrap

                   Healthy & filling, this yummy meal is great for lunch or dinner.

1 cup brown basmatti rice
fresh organic collard green leaves
1/2 cucumber, skinned & finely chopped
2 tomatoes, finely chopped
juice of 1/2 lemon
1 tsp apple cidar vinegar
1 tsp parsley, finely chopped
1/4 tsp sea salt
1/4 tsp pepper
tahini or hummus


   Place rice along with 1 1/4 cups water in pot, bring to boil, then recude heat to med-low, cover and allow to cook, about 20 minutes.
   In large bowl add all chopped ingredients along with lemon juice, vinegar & seasonings, mix well to combine.
  Wash collard green leaves thoroughly, then with a small pearing knife, carefully cut down inside length of thick stem, thinning the stem so as to make the leaf more pliable.  Spread generous amount of tahini or hummus on inside of leaf, then scoop desired amount of rice followed by veggie mixture onto the leaf, wrap it up and enjoy!
