* Sauteed Vegetables on Ciabatta

            A little bit of warmth, a little bit of raw, a whole lot of YUMMMMM!!!

1 bell pepper, cut into thin strips
1 small onion, cut into thin strips
1 cup eggplant, any variety cut into thin strips
1 tsp black pepper
1/2 cup tomato, any variety, diced
leafy green of choice, spinach, collard greens, chard or kale
ciabatta bread



   In a large pan add bell pepper, onion, eggplant, black pepper & 2 tbsp water. On med-high heat stir frequently and sautee until slightly softened, adding enough water to keep from sticking to pan.  Add tomatoes and allow to warm w/other veggies.
   While veggies are cooking, slice ciabatta bread and toast in oven until slightly crispy (350 degrees for about 5 minutes)
   When bread's ready, remove from oven & spread ample amount of pesto.  Next scoop some veggies onto bread and top w/plenty of fresh greens of choice.
