Black beans in the Crock pot


Ingredients
  • 1 pound dry black beans, washed, soaked for 8 hours and drained
  • 2 cups chopped onion
  • 2-3 cups chopped red and green bell peppers
  • 2 Tbsp olive oil
  • 4 cups organic vegetable broth
  • 1 ½ tsp salt
  • 2 tsp oregano
  • 2 tsp fennel seed
  • 2 tsp coriander
  • 2 tsp cumin
  • ¼- ½ tsp crushed red pepper
  • 1 large can diced tomatoes
  • 2 Tbsp red wine vinegar

Instructions

  1. Combine all ingredients except tomatoes and vinegar, and cook in crock pot on low 8 hours, or on high 5 hours, until beans are tender.
  2. Add tomatoes and vinegar, and serve with brown rice.  We like to top ours with plain yogurt, fresh cilantro, avocado and/or grated cheese.
