Vegan Meatballs


1 cake of firm tofu, drained well and mashed
1/2 onion, minced
1/2 cup raw walnuts or pecans, ground in blender or food processor
2 TB smooth peanut butter, or other nut butter
2 TB soy sauce
2 TB dried parsley flakes (may use 1/4 cup fresh)
1 TB mustard
1/4 tsp pepper
1/2 cup whole wheat flour


1. Place all ingredients in a large bowl. Mix well until the mixture holds together.
2. Form into 1-2 inch balls. The smaller they are the quicker they will cook, vice verse.
3. Preheat oven to 400. Cook for 15 minutes, flip the meatballs to the other side and cook for another
15 minutes until brown on both sides. You may also pan fry if you wish.
